You can add a Youtube embed block, but it's invisible in the post editor. On the front end it does display correctly.

Possibly related to WP 5.6 (or 5.5). An earlier fix we did is not working as intended anymore after the last WordPress version upgrade. Luckily in the same version the issue is already solved so we could remove our fix.
