When the Manual Override functionality is in use and when the Editor goes back into the block to edit it (e.g. add another Post) the Post Types and Tags are no longer disabled, but they should be.
This happens when editing from both Chrome and Firefox, for both evergreen and default templates, when using 1 or multiple articles block.
